Barrier Beauties get their briny flavor from the saltwater inflow in East Galveston Bay with a hint of sweetness at the perfect size. Due to their high quality and wonderful flavor, we recommend our oysters on the half-shell, but they can be equally enjoyed in gumbo, grilled or fried. Our farmed oysters can be enjoyed year-round due to the way they are grown and harvested. We are able to harvest our oysters at 2.5 inches, smaller than the 3-inch requirement for wild oysters. This gives us the ability to provide a range of sizes to the market!
